Chocolate Protein Banana Bread

Ingredients
- 3 ripe bananas, mashed
- 1/3 cup Folona Pea Protein Powder
- 1/4 cup unsweetened cocoa powder
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 tsp pure vanilla extract
- 1/2 cup semi-sweet chocolate chips (optional, for extra chocolatey goodness)
Instructions:
- Preheat your oven to 350°F (175°C). Grease a 9x5-inch (23x13 cm) loaf pan and set it aside.
- In a mixing bowl, peel and mash the ripe bananas using a fork until they are mostly smooth. A few small lumps are okay for added texture.
- In another bowl, whisk together the Folona Pea Protein Powder, cocoa powder, all-purpose flour, baking soda, baking powder, and salt. Set this dry mixture aside.
- In a large mixing bowl, cream together the softened butter and granulated sugar until the mixture becomes light and fluffy.
- Beat in the eggs one at a time, followed by the vanilla extract. Mix until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix; a few lumps are perfectly fine. If you're using chocolate chips, fold them into the batter at this stage.
- Gently fold the mashed bananas into the batter until they are evenly distributed.
- Pour the batter into the greased loaf pan and spread it out evenly.
- Place the pan in the preheated oven and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs attached.
- Allow the banana bread to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
