Chocolate Protein Banana Bread

Ingredients

  • 3 ripe bananas, mashed
  • 1/3 cup Folona Pea Protein Powder
  • 1/4 cup unsweetened cocoa powder
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp pure vanilla extract
  • 1/2 cup semi-sweet chocolate chips (optional, for extra chocolatey goodness)

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9x5-inch (23x13 cm) loaf pan and set it aside.
  2. In a mixing bowl, peel and mash the ripe bananas using a fork until they are mostly smooth. A few small lumps are okay for added texture.
  3. In another bowl, whisk together the Folona Pea Protein Powder, cocoa powder, all-purpose flour, baking soda, baking powder, and salt. Set this dry mixture aside.
  4. In a large mixing bowl, cream together the softened butter and granulated sugar until the mixture becomes light and fluffy.
  5. Beat in the eggs one at a time, followed by the vanilla extract. Mix until well combined.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix; a few lumps are perfectly fine. If you're using chocolate chips, fold them into the batter at this stage.
  7. Gently fold the mashed bananas into the batter until they are evenly distributed.
  8. Pour the batter into the greased loaf pan and spread it out evenly.
  9. Place the pan in the preheated oven and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs attached.
  10. Allow the banana bread to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
  11. Once completely cooled, slice your Chocolate Protein Banana Bread into 10 delicious pieces. Enjoy a slice as a satisfying snack or a protein-packed breakfast treat!
