Chocolate Pea Protein Cookies

Ingredients:

  • 1 cup almond flour
  • 1/2 cup pea protein powder
  • 1/4 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup erythritol (or sweetener of your choice)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup sugar-free chocolate chips

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together almond flour, pea protein powder, cocoa powder, baking powder, and salt. Set aside.
  3. In a large bowl, cream together the softened butter and erythritol until light and fluffy.
  4. Add the egg and vanilla extract to the butter mixture, beating well until fully combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until a thick cookie dough forms.
  6. Fold in the sugar-free chocolate chips until evenly distributed throughout the dough.
  7. Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Flatten each cookie slightly with the back of a spoon or your fingers.
  9. Bake in the preheated oven for 10-12 minutes or until the edges are set.
  10. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
