Vegan Beet Brownies

1 cup cooked beets, pureed
1/2 cup unsweetened cocoa powder
1/2 cup Folona pea milk
1/4 cup coconut oil, melted
1/2 cup granulated sugar
1/4 cup packed brown sugar
1 teaspoon vanilla extract
1/2 cup all-purpose flour
1/4 teaspoon baking powder
1/4 teaspoon salt


  1. Preheat oven to 350°F (175°C) and grease an 8x8-inch baking pan.
  2. In a large bowl, whisk together the pureed beets, unsweetened cocoa powder, Folona pea milk, coconut oil, granulated sugar, brown sugar, and vanilla extract until well combined.
  3. In a separate bowl, whisk together the all-purpose flour, unsweetened cocoa powder, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  5. Pour the batter into the prepared baking pan and spread evenly.
  6. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  7. Allow the brownies to cool completely before cutting into squares.
