Triple Berries & Cream Baked Oatmeal

Ingredients:

  •  2 cups old-fashioned rolled oats
  •  1 teaspoon baking powder
  •  1/2 teaspoon cinnamon
  •  1/4 teaspoon salt
  •  1 cup Folona Pea Milk (or any plant-based milk of your choice)
  •  1/2 cup unsweetened applesauce
  •  1/4 cup maple syrup
  •  1 teaspoon vanilla extract
  •  1 cup mixed berries (strawberries, blueberries, and raspberries), fresh or frozen
  •  1/4 cup chopped nuts (such as almonds or walnuts), optional
  •  1/4 cup shredded coconut, optional

For the Berry Compote:

  •  2 tablespoons maple syrup
  • 1 tablespoon chia seeds
  • 1 cup mixed berries


For the Cream Drizzle:
  •  1/2 cup vegan cream cheese
  •  2 tablespoons powdered sugar
  •  2 tablespoons Folona Pea Milk
  •  1/2 teaspoon vanilla extract

Instructions:

1. Preheat your oven to 350°F (175°C). Grease a baking dish with cooking spray or oil.
2. In a large mixing bowl, combine oats, baking powder, cinnamon, and salt.
3. In a separate bowl, whisk together Folona Pea Milk, applesauce, maple syrup, and vanilla extract.
4. Pour the wet ingredients into the dry ingredients and mix until well combined.
5. Gently fold in the mixed berries, nuts (if using), and shredded coconut.
6. Transfer the mixture to the prepared baking dish, spreading it evenly.
7. In a small saucepan, combine the berries for the compote and maple syrup. Cook over medium heat until the berries break down and the mixture thickens. Remove from heat and stir in chia seeds. Allow it to cool.
8. Spoon the berry compote over the oatmeal mixture, swirling it in with a spoon.
9. Bake in the preheated oven for 30-35 minutes or until the edges are golden brown and the center is set.
10. While the oatmeal is baking, prepare the cream drizzle by whisking together vegan cream cheese, powdered sugar, Folona Pea Milk, and vanilla extract until smooth.
11. Once the oatmeal is done, remove it from the oven and let it cool for a few minutes.
12. Drizzle the cream mixture over the baked oatmeal.
