Spicy Sausage & Kale Frittata

Ingredients:
- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 oz spicy Italian sausage, casings removed and crumbled
- 1 bunch kale, ribs removed and chopped
- 6 large eggs, beaten
- 1/2 cup Folona Bone Broth Powder
- 1/4 cup grated Parmesan cheese
- Salt and freshly ground black pepper, to taste
- Chopped fresh parsley, for garnish (optional)
Instructions:
- Heat olive oil in a large oven-safe skillet over medium heat. Add the onion and cook until softened, about 5 minutes. Stir in the garlic and cook for an additional minute, until fragrant.
- Add the sausage to the pan and cook until browned, breaking it up with a spoon as it cooks. Drain any excess grease.
- Stir in the kale and cook until wilted, about 2-3 minutes.
- In a large bowl, whisk together the eggs, Bone Broth Powder, Parmesan cheese, salt, and pepper.
- Pour the egg mixture over the sausage and kale in the skillet. Swirl the pan gently to distribute the ingredients evenly.
- Cook the frittata over medium heat for 5-7 minutes, or until the edges begin to set.
- Transfer the skillet to a preheated oven at 400°F (200°C) and bake for 10-12 minutes, or until the center is set and a toothpick inserted comes out clean.
- Let the frittata cool slightly before cutting into wedges and serving.
- Garnish with chopped fresh parsley, if desired.
