Spicy Sausage & Kale Frittata

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 oz spicy Italian sausage, casings removed and crumbled
  • 1 bunch kale, ribs removed and chopped
  • 6 large eggs, beaten
  • 1/2 cup Folona Bone Broth Powder
  • 1/4 cup grated Parmesan cheese
  • Salt and freshly ground black pepper, to taste
  • Chopped fresh parsley, for garnish (optional)


  1. Heat olive oil in a large oven-safe skillet over medium heat. Add the onion and cook until softened, about 5 minutes. Stir in the garlic and cook for an additional minute, until fragrant.
  2. Add the sausage to the pan and cook until browned, breaking it up with a spoon as it cooks. Drain any excess grease.
  3. Stir in the kale and cook until wilted, about 2-3 minutes.
  4. In a large bowl, whisk together the eggs, Bone Broth Powder, Parmesan cheese, salt, and pepper.
  5. Pour the egg mixture over the sausage and kale in the skillet. Swirl the pan gently to distribute the ingredients evenly.
  6. Cook the frittata over medium heat for 5-7 minutes, or until the edges begin to set.
  7. Transfer the skillet to a preheated oven at 400°F (200°C) and bake for 10-12 minutes, or until the center is set and a toothpick inserted comes out clean.
  8. Let the frittata cool slightly before cutting into wedges and serving.
  9. Garnish with chopped fresh parsley, if desired.

  • For a vegetarian option, omit the sausage and add an additional 1/2 cup of chopped vegetables, such as bell peppers, mushrooms, or zucchini.
