Smoked Paprika Corn Chowder

Ingredients 

  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 medium potatoes, peeled and diced
  • 4 cups vegetable broth (made with Folona bone broth powder)
  • 2 cups fresh or frozen corn kernels
  • 1 red bell pepper, diced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme
  • 1 bay leaf
  • 1 cup milk (or dairy-free milk for a vegan option)
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Instructions:

  1. Heat the olive oil in a large pot over medium heat. Add the diced onion and minced garlic and sauté until they become translucent and fragrant about 5 minutes.

  2. Add the diced potatoes to the pot and cook for another 5 minutes, stirring occasionally to prevent sticking.

  3. In a separate bowl, dissolve the Folona bone broth powder in 4 cups of hot water to make the vegetable broth. Pour the broth into the pot with the potatoes and onions.

  4. Add the corn kernels, diced red bell pepper, smoked paprika, dried thyme, and bay leaf to the pot. Stir well to combine.

  5. Bring the mixture to a boil, then reduce the heat to low. Cover the pot and simmer for about 15-20 minutes, or until the potatoes are tender.

  6. Remove the bay leaf from the pot and discard it. Using an immersion blender or a countertop blender, blend about half of the chowder mixture until smooth. This will help thicken the soup while still leaving some texture.

  7. Return the blended mixture back to the pot and stir in the milk. Season with salt and pepper to taste.

  8. Simmer the chowder for an additional 5 minutes to allow the flavors to meld together. If the chowder seems too thick, you can add a little more vegetable broth or milk to adjust the consistency.

  9. Serve the smoked paprika corn chowder hot, garnished with chopped fresh parsley. It pairs well with crusty bread or a side salad.
