Coconut Pandan Waffle with Pea Protein

Prep time: 15 minutes – Cook time: 30 minutes – Servings: 6 pancakes


1 large eggs
1 cup canned coconut milk
1 tbsp avocado oil
1 cup dairy free milk
1 tsp vanilla extract
1 tsp pandan flavoring
1/2 cups tapioca starch
1/2 cup rice flour
1 1/4 cup all purpose wheat flour
1 cup coconut sugar
1/2 cup pea protein
2 tsp baking powder
1/4 tsp salt

1. Set the waffle maker to medium high heat, or place your waffle iron on the stove over a medium high heat. Spray with cooking oil spray.
2. Pour in enough batter to cover the base iron plate, then immediately close the lid to make sure the batter is evenly distributed.
3. Cook for 3-4 minutes each side, then check to make sure the waffle is cooked to your desired level of crispiness.
4. Best enjoyed hot!
