Quinoa Chicken Soup

Ingredients1 tablespoon olive oil
1 onion, chopped
2 carrots, chopped
2 celery stalks, chopped
3 cloves garlic, minced
1 teaspoon dried thyme
1/2 teaspoon dried oregano
1/4 teaspoon salt
1/4 teaspoon black pepper
4 cups chicken broth
1 cup cooked quinoa
2 cups shredded cooked chicken
1/4 cup chopped fresh parsley
1 tablespoon Folona Bone Broth Powder
- Heat the olive oil in a large pot over medium heat. Add the onion, carrots, and celery and cook until softened, about 5 minutes.
- Add the garlic, thyme, oregano, salt, and pepper and cook for 1 minute more.
- Stir in the chicken broth, quinoa, and cooked chicken. Bring to a simmer and cook for 10 minutes, or until the quinoa is heated through.
- Stir in the parsley and Folona Bone Broth Powder. Serve immediately.
