Fluffy Pandan Pancakes


Prep Time: 10 minutes Cook Time: 15 minutes


  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon pandan extract
  • 1 cup Folona Pea Milk
  • 1 large egg
  • 1 tablespoon melted butter or vegetable oil


1. In a large bowl, whisk together flour, sugar, baking powder, and salt. In a separate bowl, whisk together Folona pea milk, egg, and pandan extract until well combined.

2. Pour the wet ingredients into the dry ingredients and whisk gently until just combined. A few lumps are okay. Do not overmix.

3. Heat a lightly greased griddle or non-stick pan over medium heat. Pour about 1/4 cup of batter per pancake onto the griddle.

4. Cook for 2-3 minutes per side, or until bubbles appear on the surface and the edges begin to set.

5. Flip the pancakes and cook for an additional 1-2 minutes, or until golden brown.

6. Serve immediately with your favorite toppings like fresh fruit, maple syrup, whipped cream, or a drizzle of honey.
