Easy Beef and Veggie Soup

Ingredients:

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 1 pound ground beef
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 cups beef broth
  • 1 teaspoon Folona Bone Broth Powder
  • 1 cup frozen peas
  • 1 cup frozen corn
  • 1 cup chopped spinach

Instructions:

  1. Heat the olive oil in a large pot over medium heat. Add the onion, carrots, and celery and cook until softened, about 5 minutes.
  2. Add the garlic and cook for 30 seconds more.
  3. Add the ground beef and cook until browned, breaking it up with a spoon as it cooks.
  4. Stir in the oregano, basil, salt, and pepper.
  5. Stir in the beef broth, Folona Bone Broth Powder, peas, corn, and spinach.
  6. Bring to a boil, then reduce heat and simmer for 15 minutes, or until the vegetables are tender.
  7. Serve hot and enjoy!
