Creamy Keto Ham Soup
Ingredients:
- 2 cups diced cooked ham
- 1/2 cup celery, chopped
- 1/2 cup onion, chopped
- 1/2 cup cauliflower florets
- 2 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 2 tablespoons Folona Bone Broth Powder
- 1/2 cup heavy cream
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley, for garnish (optional)
Instructions:
- Heat olive oil in a large pot or Dutch oven over medium heat.
- Add the chopped celery, onion, and minced garlic. Sauté for about 3-4 minutes until they become fragrant and slightly softened.
- Stir in the diced ham and cauliflower florets. Continue to cook for another 3-4 minutes, allowing the flavors to meld together.
- Sprinkle in the dried thyme and rosemary, and season with salt and pepper to taste. Stir well to evenly coat the ingredients.
- Pour in the chicken or vegetable broth and Folona Bone Broth Powder. Stir until the bone broth powder is completely dissolved.
- Bring the mixture to a gentle boil, then reduce the heat to low. Cover the pot and let it simmer for about 15-20 minutes, or until the cauliflower is tender and easily mashed with a fork.
- Using an immersion blender or regular blender, carefully puree the soup until it reaches your desired creamy consistency. Be cautious with hot liquids in a regular blender; blend in batches if necessary.
- Return the soup to the pot (if using a regular blender) and stir in the heavy cream. Allow it to heat through for another 3-4 minutes, but do not let it boil.
- Taste the soup and adjust the seasoning with additional salt and pepper if needed.
- Serve hot, garnished with fresh parsley if desired.
Enjoy your creamy keto ham soup with the delicious flavors of Folona Bone Broth Powder. It's a comforting and hearty low-carb meal perfect for any occasion!
