Coconut Blackberry Mint Smoothie

Ingredients

  • 1 cup blackberries, fresh or frozen
  • 1/2 cup shredded coconut
  • 1 banana, ripe
  • 1/2 cup Folona Pea Milk
  • 5-6 fresh mint leaves
  • 1 tablespoon honey (adjust to taste)
  • 1/2 cup ice cubes
  • A squeeze of fresh lime juice (optional)
  • Extra mint leaves and blackberries for garnish (optional)

Instructions

  1. If using fresh blackberries, rinse them thoroughly.
  2. Peel the ripe banana and break it into chunks.
  3. Measure out the shredded coconut, Folona pea milk, honey, and ice cubes.
  4. In a blender, combine the blackberries, shredded coconut, banana chunks, Folona pea milk, fresh mint leaves, and ice cubes.
  5. Add a tablespoon of honey to the blender. You can adjust the sweetness to your preference by adding more or less honey.
  6. For a zesty twist, squeeze in a bit of fresh lime juice. This will give your smoothie a refreshing kick.
  7. Put the lid on the blender and blend all the ingredients until you achieve a smooth and creamy consistency. This usually takes about 1-2 minutes.
  8. Give your smoothie a taste and adjust the sweetness or tartness by adding more honey or lime juice if needed.
