Broccoli Cheese Soup

- 2 tablespoons butter
- 1 small onion, diced
- 2 cloves garlic, minced
- 4 cups broccoli florets
- 4 cups vegetable or chicken broth (prepared using Folona Bone Broth powder)
- 1 cup milk
- 1 cup shredded cheddar cheese
- 1/4 cup all-purpose flour Salt and pepper to taste
- Optional toppings: additional shredded cheese, croutons, or chopped fresh parsley
- In a large pot, melt the butter over medium heat. Add the diced onion and minced garlic, and sauté until the onion becomes translucent and fragrant.
- Add the broccoli florets to the pot and stir them around with the onion and garlic mixture for a few minutes until they start to become tender.
- In a separate bowl, whisk together the vegetable or chicken broth (prepared using Folona Bone Broth powder) and milk. Slowly pour the mixture into the pot with the broccoli, onion, and garlic.
- Bring the soup to a simmer and let it cook for about 10-15 minutes, or until the broccoli is tender.
- In a small bowl, combine the flour with a little bit of water to create a slurry. Slowly pour the slurry into the soup while stirring continuously. This will help thicken the soup.
- Allow the soup to simmer for another 5 minutes, stirring occasionally, until it thickens slightly.
- Reduce the heat to low and gradually add the shredded cheddar cheese to the soup, stirring until the cheese melts and blends into the soup.
- Season with salt and pepper to taste. Remember that the cheese will add some saltiness to the soup, so adjust the seasoning accordingly.
- Remove the soup from the heat and let it cool slightly. Use an immersion blender or transfer the soup to a blender in batches to puree it until smooth. Be cautious when blending hot liquids to prevent accidents.
- Return the soup to the pot and reheat if necessary. If the soup is too thick, you can add a little more broth or milk to achieve the desired consistency.
