Broccoli Cheese Soup

Ingredients:

  • 2 tablespoons butter
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 4 cups broccoli florets
  • 4 cups vegetable or chicken broth (prepared using Folona Bone Broth powder)
  • 1 cup milk
  • 1 cup shredded cheddar cheese
  • 1/4 cup all-purpose flour Salt and pepper to taste
  • Optional toppings: additional shredded cheese, croutons, or chopped fresh parsley

Instructions:

  1. In a large pot, melt the butter over medium heat. Add the diced onion and minced garlic, and sauté until the onion becomes translucent and fragrant.
  2. Add the broccoli florets to the pot and stir them around with the onion and garlic mixture for a few minutes until they start to become tender.
  3. In a separate bowl, whisk together the vegetable or chicken broth (prepared using Folona Bone Broth powder) and milk. Slowly pour the mixture into the pot with the broccoli, onion, and garlic.
  4. Bring the soup to a simmer and let it cook for about 10-15 minutes, or until the broccoli is tender.
  5. In a small bowl, combine the flour with a little bit of water to create a slurry. Slowly pour the slurry into the soup while stirring continuously. This will help thicken the soup.
  6. Allow the soup to simmer for another 5 minutes, stirring occasionally, until it thickens slightly.
  7. Reduce the heat to low and gradually add the shredded cheddar cheese to the soup, stirring until the cheese melts and blends into the soup.
  8. Season with salt and pepper to taste. Remember that the cheese will add some saltiness to the soup, so adjust the seasoning accordingly.
  9. Remove the soup from the heat and let it cool slightly. Use an immersion blender or transfer the soup to a blender in batches to puree it until smooth. Be cautious when blending hot liquids to prevent accidents.
  10. Return the soup to the pot and reheat if necessary. If the soup is too thick, you can add a little more broth or milk to achieve the desired consistency.
  11. Ladle the Broccoli Cheese Soup into bowls and garnish with additional shredded cheese, croutons, or chopped fresh parsley if desired.
