Blueberry Spinach Muffin

  • 1 cup blueberries
  • 1 cup fresh spinach
  • 2 scoops Folona Collagen
  • 1 ½ cups flour
  • ½ cup sugar
  • 1 tsp baking powder
  • ½ tsp salt
  • 2 eggs
  • ½ cup melted butter
  • ½ cup milk
  • 1 tsp vanilla extract


  1. Preheat oven to 375°F.
  2. Blend blueberries, spinach, collagen in a mixer.
  3. In a bowl, mix flour, sugar, baking powder, salt.
  4. Add eggs, melted butter, milk, vanilla extract.
  5. Fold in blueberry-spinach mixture.
  6. Spoon into muffin cups.
  7. Bake for 20-25 mins.
  8. Cool and enjoy these nutrient-packed muffins!

Pair: Serve with a dollop of Greek yogurt for an extra boost of protein and creaminess.
